2013 Wing Canyon Cabernet Sauvignon


Wing Canyon has to be one of our favourite wine stories (and favourite places to visit). With two of the most friendly people at the helm, husband and wife team Bill Jenkins & Kathy Dennet. Located on the highly sought after Mount Veeder, Bill Jenkins (owner/winemaker/vineyard manager) purchased the estate in 1983. Prior to fermenting wine, his specialty was fermenting bread dough, starting up Sunrise bakery in Santa Barbara.

The vineyards are dry-farmed and farmed organically. The style of Wing Canyon is a little different than most wines from Napa Valley. They are restrained and elegant with subtle herbaceous and savoury undertones. This wine is delicious in its youth but also built for the cellar (5+ years). Only 192 cases produced.

“This wine grabs your attention with incredible aromas of dark cherries, raspberries and plums followed by notes sweet vanilla, licorice, apple and cinnamon. Fuzzy apricot with hints of cola, green tea, star anise and nutmeg round out the flavors. Soft, well-structured tannins and good acid balance make this wine a perfect package.
